Listeria monocytogenes is rare and disproportionately lethal, which is an unusual pairing. CDC active surveillance through FoodNet put invasive listeriosis at about 0.28 cases per 100,000 general-population adults per year over 2008-2016. Spread across a 59-year adult lifetime that works out to roughly 1 in 6,000, and because 93 to 99 percent of confirmed cases land in a hospital, the lifetime odds of being sickened and the lifetime odds of being hospitalized are nearly the same number. Around a fifth of those cases end in death, so the lifetime death figure for a typical adult sits an order of magnitude lower, near 1 in 30,000.
Deli meat earns its place in this entry as the canonical vehicle rather than the only one. The 2024 Boar’s Head outbreak was the largest US listeria event since the 2011 cantaloupe outbreak: 61 confirmed infections across 19 states, 60 hospitalizations, 10 deaths, more than 7 million pounds of product recalled, and a Virginia plant shut down. That is the version of this risk people remember, and it is genuinely severe. It is also episodic. Ready-to-eat meats sit alongside soft cheeses and raw produce in the overall listeriosis ledger, so the deli-meat-only slice of the headline rate is smaller than the all-source figure quoted here, a gap the entry flags rather than papers over with a fabricated denominator.
The averaged rate hides where the burden actually falls. CDC Vital Signs reported a relative risk of about 10 for pregnant women and 24 for pregnant Hispanic women, and FoodNet recorded 1.33 cases per 100,000 among adults 70 and older against 0.28 in the general population. For a healthy non-pregnant adult under 65, the practical risk from a cold-cut sandwich is very low; for a pregnant person or an octogenarian it is several to twenty-some times higher, and the consequences (fetal loss, neonatal infection, death) are correspondingly worse. The same sandwich carries a different number depending on who is eating it.
